Goat cheese salad

Serves 4

- 100g mixed green salad
- 4 goat cheese crottins
- 2 slices of yeast bread
- 1 apple (Golden Delicious)
- Lemon juice
- 1 handful pistachios
- 1 tablespoon Sirop de Liège
- 2 tablespoons Xérès vinegar
- 5 tablespoons first cold pressed extra virgin olive oil
- Fleur de sel, freshly ground pepper


  1. Make dressing: in a bowl, whisk olive oil, Sirop de Liège and vinegar and season with salt and pepper.
  2. Grill bread and crumble it up into small croutons. Peel and core apple and sprinkle it with lemon juice to keep it from browning.
  3. Slice up cheese.
  4. Brown pistachios in a pan.
  5. Garnish a plate with salad, sprinkled with dressing, a few slices of apple, goat cheese, sprinkle with dressing once again, and top off with croutons and pistachios.
  6. Serve right away.
